DAVE’S INSANITY CUPCAKES WITH GAMMON FLITCH FROSTING

1 box spice flavored cake mix prepared as per box instructions for cupcakes, using the following:
3 eggs
1/3 cup vegetable oil
1 1/4 cups water
1 teasopon Dave’s Insanity Sauce
Or can substitute: 1/2 teaspoon cayenne pepper AND 1/2 teaspoon dried chipotle powder OR 1 whole seeded and chopped habanero pepper

Makes 24 cupcakes.

GAMMON FLITCH FROSTING

While cupcakes are baking, fry and crumble one 12 ounce package of bacon, reserving fat. Allow fat to cool for 15 minutes.

Using an electric mixer, combine 1/2 cup of the reserved bacon fat with a one pound box of powdered sugar, 1/2 teaspoon vanilla and 1 Tbsp milk. Adjust with either more milk or more powdered sugar until it is of the desired frosting consistency. Add the crumbled bacon. Frost the cooled cupcakes and enjoy will a tall, frosty glass of whole milk.

Makes an excellent potluck item for April Fool’s Day or your last day at work.

The Most Yummy Pumpkin Muffin Recipe Ever!

1 1/2 Cups flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1 tsp. pumpkin pie spice (I used a combination of cloves, ginger and nutmeg because that is what I had)

1 cup pumpkin puree (from a 15 oz can. There will be wasted pumpkin if you buy the big one.)

1/3 cup vegetable oil

2 lg. eggs

1 1/4 cups sugar

preheat oven to 350 degrees.

In medium bowl, combine dry ingredients. In a separate bowl, stir together the wet ingredients. Combine the contents of the two bowls and mix them together until the ingredients are well combined. Be careful not to overmix the batter or you will toughen the muffins. Fill paper lined muffin tins, 2/3 full and bake for 23-27 minutes.  Allow to cool on wire rack for a second and then eat them all really quickly before your family can get to them. (just kidding.) Makes about 20 or so. Hope you give them a try!
